About Green Tea

Green tea is one of the fastest-growing segments in the US specialty tea market due to continued media attention surrounding its abundant health benefits. Green tea is rich in EGCG (Epigallocatechin gallate; one of nature's most potent antioxidants) and is gaining widespread popularity due to its natural ability to promote weight-loss and good health.  

As a result of minimal processing, green tea retains its natural appearance and vibrant color as well as high levels of the plant's healthy properties.  Green tea varies dramatically in flavor from grassy and sweet, to floral and fresh, to nutty and roasted.  Like fine wine, green tea's flavor depends on the plant varietal, season of harvest, soil, elevation, weather, cultivation and origin.  Each region has its own distinct flavor and aroma.

Green tea comes from leaves that are immediately steamed or fired to halt the active leaf enzymes that would otherwise react with oxygen.  In China, this is generally done by roasting or pan-firing the leaves while, in Japan, this is usually accomplished by steaming the leaves at a high temperature.  The Chinese style of processing tends to bring out a smooth, aromatic flavor while the steaming process yields a deep vegetal or herbaceous quality-–a characteristic prized in Japanese teas.
