Description
The gardens surrounding Tung Ting (aka Dong Ding or Frozen Summit) Mountain in Taiwan produce some of the world’s most sought-after oolongs. This region is famous for baking tealeaves at high temperatures, a process that imparts a sweet, richness by gradually caramelizing the natural sugars in the leaf. This “medium roast” oolong offers toasty notes of Brazil nuts, rustic French-bakery aromas, and a long, pleasant finish. With heavy cloud cover and cool evening temperatures, tea plants grown in higher elevations develop at a slower rate, which concentrates the plant’s minerals and phytonutrients into fewer leaves.

Water Temperature: 195°F

Leaf to Water Ratio: 1 tablespoons per 16 oz

Steep Time: 3-4 minutes

General Guide:

  1. Add tea leaves to a teapot, fill-your-own tea bag or infuser basket.
  2. Use 1 to 3 teaspoons (1 tablespoon) of leaves per cup (8 oz) of water. Adjust to taste.
  3. Bring fresh, cold water to a rolling boil, allow it to cool slightly, then pour water over tea leaves and cover.
  4. Infuse (steep) leaves 2-5 minutes; 3½ minutes is a good average that works well for most tea types. Do not oversteep or tea may become bitter. If you prefer strong tea, simply use more leaves.
  5. Remove bag or infuser from water or strain leaves. Enjoy!

Water Quality: Tea is only as good as the water used to prepare it. Avoid distilled or unfiltered tap water, which can limit tea’s flavor. Bottled spring water or filtered tap water is ideal.

Water Temperature: Most teas taste best when prepared with water around 195˚F (just below boiling); however, some teas require a lower temperature or they may become bitter.

Eastern Brewing Method: High-quality oolongs and certain specialty teas may be enhanced by the Gongfu (Eastern) brewing method, which uses a higher leaf-to-water ratio and multiple, short infusion times to bring out the subtle nuances and full flavor spectrum. Fill a warmed porcelain gaiwan or miniature (4-10 oz) teapot 20% full with tea leaves. Add 195°F water. Steep the first infusion for 30-90 seconds and decant. Repeat for another 3-5 infusions.

    I've been a tea drinker for years and have stuck with the heftier black varieties like pu-erh, assam, etc. Then my parents visited Thailand and came home with some oolong as a gift, and I fell in love. I immediately looked around for a good place to buy from. I landed at Octavia and bought several samples. To me, the Monkey Picked Tung Ting was among the best of them. It's got a complex and nutty flavor I find very addictive. I highly recommend it.

    I received Formosa Dong Ding as a sample with my order. It has a strange- sounding name to my English-speaking ears (I want to say "ding dong"). And looking at the tea, it isn't the prettiest to look at. But after one sip, whoa, this one made me pause and think wow, omg. it has a slightly nutty flavor to it. I savored every drop and for whatever reason had a smile on my face after drinking my cup. definitely didn't see that coming, like the saying not to judge a book by its cover, i guess!
