Grown high in the mist-cloaked mountains of Fujian Province, this soothing, mellow green tea offers delicate, aromatic notes of lilac and toasted pine nut. Tea grown at high elevations is highly sought after because the leaf develops at a slower rate, storing up extra antioxidants and achieving an enhanced complexity of flavor. According to legend, Buddhist monks harvested high-elevation teas by training monkeys to pick the difficult-to-reach leaves from wild tea trees precariously perched along treacherous cliffs.

Water Quality: Tea is only as good as the water used to prepare it. Avoid distilled or unfiltered tap water, which can limit tea’s flavor. Bottled spring water or filtered tap water is ideal.
Water Temperature: Most teas taste best when prepared with water around 195˚F (just below boiling); however, some teas require a lower temperature or they may become bitter.
